Easy Baking Powder Drop Biscuits - Neighbourly Style

Its Friday! hoot hoot!  Friday comes after a special couple of days at work.  Convocation.  Four convocation ceremonies in 2 days with mixed emotions evident by the tearful hugs the students gave each other, the tearful proud moments by family members and friends, and lots of excitement and relief by the grads themselves...they did it!  Now begins a new chapter for them....

Its time to drive off to the cottage again and that reminds me of last weekend I've been waiting to share something from.  So.... Marc and I were on our way out and discovered this hanging outside the door...
We opened it up and found a lovely card with pink daisies on it. Unfortunately the picture of the card was so blurry but believe me it was so springy.  This surprise was a thank you from our neighbours Bob and Georgia for the little goodies we brought over to them last weekend. 
Inside 2 packages were the most delicious, buttery smelling Drop Biscuits.....ohhhh yum.  I told Marc we would have to wait until we got back (we were on our way out remember..) and we could sit down and savour them.
In the end I said "Okayyyyyy" and we each had a bite.....mmmmmm...wrapped it back up until we got back.
They were soooooo good.  We enjoyed them with some strawberry preserves...mmmmm....and Georgia included the recipe for us.  I'm sharing with you...

Easy Baking Powder Drop Biscuits

2 cups all purpose flour
2-1/2 tsp baking powder
1/2 tsp salt
1 tbsp. white sugar
1/2 cup chilled butter, diced
1-1/4 cups milk

Preheat oven to 450F. 
Mix flour, baking powder, salt and sugar in a bowl.  Cut in the cold butter with a kniofe or pastry blender until the mixture resembles coarse crumbs.  Add mlk a little at a time, stirring lightly between additions.

Drop the batter by spoonfuls onto a cookie sheet, and bake for 12 to 15 minutes, until the tops are golden.

We're making strawberry preserves this weekend.  It might be the perfect time to bake some of these delectable biscuits.  Try them you won't believe how yum they are.

OMG...I am now gonna have those drop biscuits on my mind for hours. They look WONDERFUL! You guys really showed great restraint!!! I would have gobbled them up in three bites!!! ;)

These look so light and flaky! Lovely! Now I am gonna have to try them, Judi! The strawberry preserves sound perfect for them. My Grandma used to make Strawberry Freezer Jam. It is so wonderful! Hope your jam turns out to be your best ever! Thanks for showing your recipe! It would be fun to open these up and turn into little breakfast sandwiches too!
