Homemade Corned Beef and Potato Hash - Yum!

We enjoyed our delicious corned beef dinner for St. Patrick's day last night. We fixed it in the crock pot with corned beef, spices, potatoes, large chunks of carrots and 1/2 head of cabbage cut into large wedges. Nine hours, that we could hardly wait, and it was done.

Marc known as the King of breakfasts made us corned beef and potato hash this morning. He chopped the corned beef, onion, boiled potatoes into little pieces, added spices and cooked them in a skillet. They browned up just perfect. He served it up with poached eggs on top. Are they not the perfect eggs?


They were picture perfect so I had to take pictures. He doesn't even cheat but makes them in a skillet with water. I added a touch of salt and pepper.....mmmmmm... It was so delicious made from scratch. Do you like corned beef hash with potatoes?

Yummy. All I could think was thank you for St. Patrick's Day.... Judi xoxo

I ♥ corned beef hash! It was a pity that we didn't have any corned beef left last week to make any. My teen could eat her weight in corned beef, I think (and never gain a pound!).

Those eggs look perfect--dh would be drooling at that plate if he saw it, lol!

Oh yes, Judi, I sure do like corned beef hash and eggs for breakfast -- or for anytime! It makes me think of Mama.
