Delicious...Tenderflake Spinach Feta Meat Appetizers

When Marc and I entertain or we take something to share with our friends we mostly do appetizers. We tend to serve or take over something totally new which means our friends are the guinea pigs. So far our friends must be pretty good sports because they welcome our new creations.

Last weekend we were up for experimenting and coming up with a new appetizer. We tossed around what we thought we'd like it to taste like, then we thought of this and thought of that and then we tried it out. We came up with these delicious puff pastry appetizers.
Tenderflake Spinach Feta Meat Appetizers
1 package ofTenderflake Puff Pastry
2 eggs
1 tablepoon water
4 oz bulk pork sausage
1 cup feta cheese crumbled
1/2 cup mushrooms, chopped
1/2 package chopped spinach, thawed and drain well
1 small onion chopped
5 tbsp. chopped parsley
olive oil
pepper to taste
pinch of cayenne pepper
Thaw the Tenderflake puff pastry in the fridge or room temperature for about 40 minutes.
Preheat oven to 400F. Lightly grease 2 baking sheets.
In a small bowl mix 1 egg and 1 tbsp. water. Set aside.
In a skillet add olive oil and fry mushrooms and onion until softened. Remove and set aside. Fry the pork sausage until done and drain any grease.
Into a medium bowl combine the egg, sausage, spinach, mushrooms, onion, feta cheese, parsley and spices.
Roll each of the pieces of Tenderflake into a 12" square. Cut each into 3" squares. Brush egg water mix along the side of each 3" square. Place 1 tbsp of mixture in the middle of square.
Fold one end over to form a triangle and pinch closed. Brush with egg mixture.
Place on the baking sheets and bake for 20 minutes or until lightly browned.
mmmmmmm I loved the taste of these Tenderflake appetizers.
Marc loved them toooo.....They tasted so yummy, looked sooo delish and the pastry was so light and flakey.
We enjoyed them dipped in a Thai sauce that had bit of heat...
This week end we'll try them out on family coming for dinner. Yum!

YUM for sure! I just bought some similar to those in the freezer section of the grocery store! They were YUMMY too, so light and fluffy... only 45 calories for TWO!
