It started with Starbucks coffee with which I enjoyed a slice of lemon poppyseed loaf. I treat myself to this sometimes when I'm galavanting around town. I KNOW I cannot drink coffee after about 5:00 p.m. if I plan to sleep.
Unfortunately I was having such a great evening out I didn't realize it was almost 7 p.m. as I arrived home having just finished off the coffee. Needless to say I was up until after 1:30 a.m. and maybe slept 4 hours before getting up for work. The point of this story is I have been thinking about that lemon poppyseed loaf. So I baked one on Thursday night to take with me to the cottage.
This is the RECIPE if you like lemon poppyseed cake. I LOVE the taste of lemon. This recipe puts lemon rind in the batter and mixes lemon juice, sugar and more lemon rind which is poured into those poked holes you put into the loaf. Instead of one large one I made 3 small ones. I decided to sift some powdered sugar over them which although it settles on and then you can't see it...it gives a nice taste.
