Pickled Green Tomatoes

Yesterday at the grocery store in the aisle where there is usually a big display of red tomatoes I was surprised to see a big display of green tomatoes.  I bought some to make pickled green tomatoes.  I put them in the fridge until tonight when I realized I was missing an ingredient and they started to ripen quickly. 
 The recipe was from one of my Sunset - Canning and Pickling books (recipe below).  I made 5 jars of the green tomatoes along with carrots, green peppers, baby carrots, onions, garlic and spices.
The recipe doesn't say how long to wait before trying them.  Thats odd.  Maybe that means it won't be a long time.  I'm anxious to give them a try.  I love pickles and pickled veggies.  Do you like them?

I love pickled vegetables too! Down here in the South, if we see a green tomato, we fry it!

Hi Judi, My, you have been busy. Me too in an unproductive way. Smile. Just playing and having fun. But now I have to pay the piper. I must do the mundane things like... clean in detail. I'm on it today!

Your pickled veggies look fabulous and I know they will be delicious. Good job. Let me know how they taste.
My sister cans tomatoes like crazy. This is the fist year I have not been able to help her. We can together and share the bounty. she told me she is missing me. We live one mile apart but a month in Maine, company galore and Canada. I am ready to relax a bit. I miss her too. Smile.

Just tonight we were at a restaurant and they had pickled green peppers! I had never seen these, but want to try a sweet pickle recipe for them!!! They were delicious! Thanks for the recipe!!!
