My Slightly Kicked UP Baked Chicken....

I have a discovered a new way of baking chicken.  It was a recipe that just came to me as a sort of "build on" to my former quick and easy way to bake chicken.  Slightly changed up and now with a bit of kick in heat and a peppery flavour.  I've made it a few times now including tonight so I thought I HAVE to share it with you.  One of those quick to put together dinners you can forget....just for a while and its done!

Preheat your oven to 385F.  (It can handle over 350F and I like it under 400F) sooo thus strange heat..*s*.

Place boneless, skinless chicken in a baking dish.   Slice over some large chunks of green and/or red peppers and mushrooms.  Next pour Italian Zesty Salad dressing over the chicken quite liberally over the chicken so it sort of drips down to the pan.  Next I add Diana Sauce which is a nice BBQ sauce we have in Canada and the flavour I use is Rib and Chicken but you can use any Rib and Chicken BBQ Sauce (for this taste).  Now each time I have made this I've had about 1/2 a can of Green Chillies in the fridge.  I spoon over about 6 teaspoons (adjust to your taste) of the green chillies over and about the chicken.

Serve it over rice or shred the chicken and serve it with the veggies and juice in a tortilla.  In that case I would add a little more Italian dressing and bbq sauce for extra liquid.  mmmmmmm... and it has just that nice bit of heat to it.

Looks and sounds devine, Judi!!! You sure can do some good cookin! I wish I could come live at your house...I could just give you my whole paycheck just to live there and you feed me. That's all. Hehehe.

That sounds and looks delicious. Thanks for sharing the recipe. I'll give it a try sometimes. We eat chicken nearly every day so it will be nice to try something a bit different.
